It is born in Treviso and then exported all over the world, from Tokyo to Montecarlo, from Cortina to Milan, passing through Toronto and Bora Bora for a total of 23 locations from one side of the planet to the other. But there are those who have not forgotten and wanted to revive the iconic restaurant starting from Cortina d’Ampezzo to give life to their dream: that of a group of young entrepreneurs from Abruzzo forever in love with the “pearl of the Dolomites”, its traditions and its charm. And so the “barn” – in Ladino Toulà, in fact – becomes Toulà Food and Dining Group SpA (based in Pescara) and is included within their Dynamin Holding Group with the aim of reviving the brand internationally by re-proposing a new Italian

style of taste but without altering the tradition, the spirit and the intrinsic charm of the El Toulà restaurant. So much so that in Cortina Chef Luca Poretto remains firmly held, together with Manager Dario Buosi, the true elements of continuity with the past. And the creativity of Poretto, which is based on a relentless pursuit of the quality of the ingredients to give life to true masterpieces of culinary art, well juggles between iconic dishes and flavors of the territory: from traditional beef tartare to smoked salmon “at home”, from the casunzei of red turnip to Ampezzana up to the creamed rice with red radicchio from Treviso and Amarone, which together with Ripasso, to the millesimate reserves and the most exclusive bubbles from Italy and France accompanies the traditional dishes revisited in an international key. There also are Abruzzo wines, a tribute to the origins of the entrepreneurial pool that aspires, precisely through the Toulà, to bring back the culture and creativity of Italian high-quality food in the world.
