Tanto pi\u00f9 che molti piatti vengono proprio terminati davanti ai commensali, non certo per un mero effetto scenografico ma per dare un reale valore aggiunto al gusto del piatto. Ed ecco allora un men\u00f9 in cui spiccano il gusto e la piacevolezza di alimenti cotti alla brace oppure affumicati o, come si diceva, terminati con il cannello o la pietra ollare<\/span><span> direttamente sulla tavola.<br \/>Il ristorante, che si trovava all\u2019interno di un\u2019antica fornace che produceva mattoni prima di trasferirsi all\u2019attuale indirizzo, mantiene vivo il legame con la vecchia sede grazie al logo, che ha nel suo design un camino stilizzato, ma anche attraverso i vecchi carrelli posti all\u2019esterno: utilizzati un tempo per cuocere i mattoni, sono stati trasformati in fioriere che danno il benvenuto agli ospiti che all\u2019interno del ristorante trovano un luogo elegante ma non formale, in cui le sobrie tonalit\u00e0 ben si abbinano con dettagli originali e di buongusto come ad esempio i piccoli bonsai che presidiano ogni tavolo. La sua filosofia di cucina ama esaltare la qualit\u00e0 dell\u2019elemento principe del piatto e il gusto chiaro e definito degli altri ingredienti che lo accompagnano, mantenendo sempre una tavolozza di sapori bilanciati ed equilibrati, cambiando il men\u00f9 periodicamente seguendo le stagioni e disseminando tra antipasti, primi, secondi e dessert alcuni piatti che hanno come protagonista, appunto, il fuoco. Tra i suoi piatti iconici troviamo il \u201cCubo di Tonno alla Fiamma\u201d e \u201cDalla brace all\u2019inferno. Galletto di Bresse alla diavola con verdure inferocite\u201d. Oltre ai piatti alla carta, il Ristorante La Fornace propone due men\u00f9 degustazione. Uno con quattro portate a scelta (\u20ac 65,00) e uno dedicato al \u201cBuon Ricordo\u201d, anch\u2019esso di quattro portate tra le quali il signature dish \u201cGnocchi DOP, ovvero gnocchi di patate e spinaci con pomodoro, panna e pesto\u201d.
