Fatto s\u00ec di tecnica, ma anche e soprattutto di arte, creativit\u00e0, cuore e virtuali pennellate di colore in ogni piatto.<br \/>Partendo dalla sua Napoli, spinge la tradizione fino ai confini del mondo perch\u00e9 nelle sue ricette c\u2019\u00e8 tutto il sapore verace del Mare Nostrum ma ci sono anche le sue esperienze oltreconfine per presentarci piatti che parlano di un concetto tutto nuovo di mediterraneit\u00e0. Sette capitoli per altrettanti colori ricchi di significato.<br \/>Il <span><em>Pane<\/em><\/span>, associato al <span><em>Giallo<\/em><\/span> del grano, \u00e8 un momento di condivisione per chi si siede alla sua tavola dove taralli, grissini e pane cafone segnano l\u2019inizio del suo percorso culinario accompagnati dai saporiti burri di bufala e dal pregiato olio di Giorgia, dedicato alla figlia e prodotto sui monti Iblei. L\u2019<span><em>Arancione<\/em><\/span> \u00e8 il filo conduttore dei piatti di <em><span>Benvenuto<\/span>,<\/em> quegli amuse buche tra cui spiccano ricordi di infanzia <span>come nel caso del Bign\u00e8 di finto rag\u00f9 napoletano, che sono da preludio al <\/span><span><em>Nero <\/em><\/span><span>degli <\/span><span><em>Antipasti<\/em><\/span><span>. Una tonalit\u00e0 scelta non tanto per le materie prime utilizzate quanto per rispondere alla variet\u00e0 di gusto: il nero ha una matrice propria, esattamente come i suoi sapori, che sono liberi e senza costrizioni. Dalla Parmigiana espressionista racchiusa in un velo di carbone vegetale, uno scrigno di ingredienti nostrani mescolati a quelli d&#8217;Oriente, o al Carciofo cacio e ova abbinato a french toast al tartufo nero, che ricorda un fiore, per finire con la Capasanta fra Santiago e Napoli e i suoi sapori agli antipodi. Il <\/span><span><em>Rosso<\/em><\/span><span> &#8211; come la passione che infiamma i gusti, che rimette al centro la mediterraneit\u00e0 e come il pomodoro spesso protagonista delle ricette \u2013 ci conduce attraverso i <\/span><span><em>Primi Piatti<\/em><\/span><span> tra cui il suo signature, quel Risotto Milano-Napoli che associa la tradizione meneghina con il risotto alla pescatora in un gioco di sottili equilibri. Nel capitolo dedicato ai <\/span><span><em>Secondi Piatti<\/em><\/span><span> sono tutte le sfumature del <\/span><span><em>Blu<\/em><\/span><span> a condurre il gioco e a indicare la profondit\u00e0 della bont\u00e0, come nel caso della Cotoletta del figlio ultimo, che porta nel piatto un ricordo di famiglia e una bella parte di cuore di Roberto.
