Stefania Calugi, founder of the company of the same name in 1987, has always been known for her peculiar creative flair that over time has led her to put on the market products that, even after decades, are best sellers. The new line is called MAESTRI DEL TARTUFO was created thanks to the collaboration with Chef Marco Stabile of the Ora d’Aria  restaurant in Florence: and the fruits that resulted from it bear the name of “Creamy apples with truffle”, “Aristà alla fiorentina with truffle “and” Caramellatte with truffle “. A spreadable apple-based sauce with summer truffle: this is “Creamy apples with truffle”, for which Golden Delicious apples are used and which is particularly flexible in the kitchen, from gourmet sandwiches to numerous preparations such as first and second courses. This appeal of lively elegance is then found in “Caramellatte with truffle”, where the softness of the milk that is slowly cooked together with brown sugar envelops the summer truffle with the result of a cream with a velvety texture and intense taste: it can be used alone or it can embellish pastry-based preparations, pastries, cakes or even accompany ice cream. “Aristà alla fiorentina con tartufo” is instead a declaration of love for the Tuscan countryside since the inspiration derives from the custom of boiling the meat preserved in salt in water and aromatic herbs and finally putting it in oil in the form of fillets so that we can keep it for a long time.
