Wineries rich in history and suggestions at Il Borro Relais, cellars that are the pulsating heart of an entire estate.
We are in Tuscany in the lush Valdarno, where at the foot of Mount Pratomagno there is Il Borro Relais, once a castle of the twelfth century and then a medieval hamlet which, over time, belonged to Dal Borro noble family, then to Medici-Tornaquinci, to the Hohenlohe-Waldenburg and finally to the Aosta. And it was the Duke Amedeo of Savoy-Aosta who sold all the property in the early 90’s to Ferruccio Ferragamo, transformed and shaped this ancient hamlet with his family and gave birth in 1995 to his winemaking revival. In the 45 hectares of vineyards, ranging between 300 and 500 meters above sea level, each
variety finds its own terroir: the vines of Merlot, Syrah, Petit Verdot, Cabernet, Sauvignon, Chardonnay and of course Sangiovese provide the grapes which are harvested manually carefully, dirty, pressed and conveyed in steel or wood containers for alcoholic fermentation, tell the wine making process that winds under the Villa Il Borro, in those cellars excavated in the land that represent the value of the time that is breathed throughout the Estate. And the history of wine and its importance in the everyday life of man since the dawn is also told in the Wine & Art Gallery located above the cellars. The exhibition “From Mantegna to Warhol. Wine Stories” inaugurated in October 2014 is a true journey into Borro’s philosophy, where history, culture, respect for
the land and sustainability criteria blend into perfection. Become part of the prestigious Relais & Châteaux circuit in 2013, Il Borro continues to carry on its many projects aimed at innovating its ethical vision and restoration, such as zero-bill houses, photovoltaic system introduced in 2011, a vegetable organic garden dedicated to local customers (with delivery at home) and the menus of the restaurants held by the executive Chef Andrea Campani: the Vin Cafè, the Tuscan Bistro and the gourmet
Osteria del Borro. A philosophy that also involves all other aspects of Borro’s life, from hospitality to luxury villas or prestigious suites of the Borgo, to wellness areas, to the opening of craft workshops, to certified organic farming in 2015 and then to reunite with wine production. Between labels produced by the estate there are Il Borro, IGT Toscana Rosso (50% Merlot, 35% Cabernet,
10% Syrah, 5% Petit Verdot); Lamelle, IGT Toscana Bianco 100% Chardonnay; Occhio di Pernice, Vin Santo del Chianti 100% Sangiovese; Borro’s bubbles, the challenge of a spumante Rosè 100% Sangiovese Classic Method (2001) left matured for 48 months on yeasts. But the diamond’s point of wine production is undoubtedly Alessandro Dal Borro: obtained from Syrah in purity and wanted by Ferruccio Ferragamo to celebrate the historical origins of the Borro, it is only in magnum version 1.5 liters.
