We are in Monforte d’Alba at Réva Vino&Resort, the first structure with winery and restaurant offering a truly immersive experience in the Langhe with a bridge between the luxury welcome and the direct knowledge of the daily life of these places, their flavors , of the scenic beauty, of the enological, gastronomic and artisan excellences. Thus, Réva has chosen a 100% organic regime for the management of the vineyards in some of the most important cru of the Langhe and for the production – with own label – of the great wines of the area: Barolo Docg,
Barolo DOCG Ravera, Barbera d’Alba DOC Superiore, Nebbiolo d’Alba Doc, Dolcetto d’Alba Doc, Langhe Sauvignon Doc. The entire resort – obtained from an old farmhouse, the Tenuta di San Sebastiano – has maintained the architecture of a typical farmhouse of the late nineteenth century, built around a large farmyard where the productive buildings stood and it has 12 rooms overlooking the vineyards, an outdoor swimming pool with panoramic views, a golf course, an indoor pool and a modern SPA created from the ancient cellars that spring owned water (like all the rest of the structure) by taking it from an autochthonous source. Integral sustainability in fact, also because Réva self-produces 100% of the energy needs through a 30Kw photovoltaic park, hot water is guaranteed by solar panels, the heating is provided by a pellet-fired thermal power plant and even the road that reaches the resort is biological: no cement or asphalt but an amalgam of langa stone and gravel mixed with water and natural
resins. Where once there was a blacksmith’s workshop, now there is the restaurant FRE (fré in Piedmontese means precisely blacksmith), whose menus are born from the harmonization of local products, especially wild and spontaneous ones, made by chef Paolo Meneguz, with great attention to sustainability, territoriality and the fight against waste. And of course at Km more than zero, thanks to an organic vegetable garden and orchard where vegetables, fruits of ancient varieties and aromatic herbs are grown. So much so that the FRE menu is not made up of dishes but of ingredients that the customer selects according to their tastes. Then, space for the creativity of the chef. And then there are the “Experiences”, exclusive and personalized services that range from the search for truffles to guided tours in the vineyards and cellars, to the discovery of nature, culture and tradition of the Langhe on board an E-bike.
