The Hotel Vilòn and its Adelaide Restaurant, born from the stylistic collaboration between a set designer, a photographer and an interior designer, find space in a dwelling annexed to Palazzo Borghese.
The new Vilòn hotel exudes warmth, grace and intimacy, almost hidden behind a small door in the secluded Via dell’Arancio beyond which an exciting space opens up with a domestic feeling but at the same time vibrant and cosmopolitan. The Luxury hotel, affiliated Small Luxury Hotel of the World and the only hotel in Rome included among the newest hotels in the world in the 2019 list of Travel & Leisure, has 18 rooms and suites – each one different from the other, in retro-chic style – many of which offer an exclusive view of the private garden of Palazzo Borghese. The concept and the interiors are the result of a careful restoration lasted 3 years, with the collaboration of cinematographic set
designer Paolo Bonfini, photographer Massimo Listri and interior design Giampiero Panepinto. Inside the structure there also is the charming novelty of gastronomic Rome, the Adelaide Restaurant, 40 seats between inside and patio surrounded by ferns and philodendrons. Here the chef Gabriele Muro, born in Procida and Roman by adoption, captures the attention and the palate of the guests (even externals) right from breakfast with a buffet full of color, fragrance and taste. In his lunch and dinner menu, instead, there are dishes with a contemporary taste and at the same time “true”: from the Polp Fiction, roast octopus lacquered with India aromas, provola and friarelli sauce, to Ajo Ojo and Baccalà with spaghettoni,
peeled cod, bread crumbs and parsley powder. Among his signature dishes there is the Vizio del Marinaio, a sandwich of sea bass, endive escarole, sea lettuce and caviar. The dessert card is by the young chef pâtissier Andrea De Benedetto, whose most iconic dessert is Mont Vilòn, a meringue ball filled with fresh caki sauce, vanilla mousse and brown spaghetti. Articulated the Wine List, with a choice of over 80 references of great Italian classics and a selection of champagne. Finally, there is the Adelaide Lounge Bar “In Salotto”, the right space to relax with an afternoon tea, an aperitif accompanied by finger food or a cocktail created by the professional and creative bar lady Magdalena Rodriguez.
