Carne is the first Milanese “One Thing Restaurant” where there is a single main dish, a single cut of Piedmontese beef. And it even comes home with recipes from around the world.
Carne is a “One Thing Restaurant”, the first in Milan, which revolves around Lombatello, a cut of Piedmontese beef (coming in this case from the La Granda consortium). The main course, baptized “Love Loin” is flanked by a couple of daily “Specials” off the menu and side dishes of potatoes cooked in bovine fat and vegetables according to the season. The wine list includes only ten labels including whites, reds and bubbles, all Triple AAA, to which are also added artisanal beers. For the drink menu, a collaboration with an artisan laboratory in Rome, “Drink | It”, was born: five cocktails in seasonal rotation mixed in pre-bach that will be presented and sold in a glass bottle that can be consumed on site or at home. The Special Boxes also arrive at home, in perfect harmony with the restaurant’s philosophy. Within the Meat menus – which has as its undisputed protagonist the “Love Loin”, the perfect steak at any time of the day – every month 4 specials are introduced in rotation with selected meats contaminated with recipes taken from all over the world. One of these is chosen and becomes the protagonist of the monthly “Special Box”, which contains selected meats and other ingredients to compose a dinner for two complete with side dishes. The “Special Box” contain ingredients often not easily available, already portioned and without any waste of food and money. The preparation of the recipe is explained step by step with photos of all the steps and Carne also provides the direct support of the chef for any doubts during the preparation.
