At the Lino gastronomic restaurant in Pavia, now a reference address for haute cuisine enthusiasts, 2023 kicks off with a choral and heartfelt thanks to chef Federico Sgorbini, who has decided to say goodbye to the Lino family to devote himself to new professional projects. “A chapter begun together four years ago – says chef Andrea Ribaldone -, with Federico we have seen the birth and evolution of the Lino restaurant up to the achievement of the ambitious goal of bringing the Michelin Star back to Pavia after more than forty years. Emotions that will remain indelible. Therefore, also on behalf of the Lino property, we wish Federico new exciting adventures, reminding him that the Lino door will always be open“. So, Andrea Ribaldone and all the staff welcome chef Valerio Tafuri to the gastronomic cuisine of Lino, after his experience at the head of the Lino Bistrot and with numerous professional experiences alongside Andrea Ribaldone in his curriculum vitae. From the inspiration and their respective gastronomic-cultural backgrounds, three new gourmet itineraries are born with the Ribaldone – Tafuri duet. Filosofia, ten freehand passages by the chefs (€ 160.00); Viaggio, a 6-stage itinerary of taste, refined and original in the combinations (€ 120,00). And finally Terra, a menu with which Ribaldone and Tafuri bring traditional raw materials to the table with new incursions and fermentations (€ 110,00). But that’s not all, because soon the chefs will also reveal an all-vegetable itinerary. The wine list also deserves attention, edited and refined by the young Sommelier Mirko Chiora, which offers a wide selection of labels from Oltrepò Pavese, home of Pinot Noir and Classic Method, and from the best national and international wineries. The restaurant confirms the experience of the “Chef’s table” positioned in front of the kitchen counter and from where it is therefore possible to admire the work of the chefs and the
brigade at every step; and the small room on the lower floor where you can enjoy dessert or end the evening sipping a drink or a fine distillate.
