Wines and vinegars that express their full origin territory as the farm founded in 1980 by Enzo Manicardi in Castelvetro di Modena, an ancient medieval village in the heart of Emilia Romagna famous for its towers and for the production of the wine symbol of the region, the Lambrusco Grasparossa. Today the company is led by Maria Livia Manicardi that, following in the footsteps of his father, carries a continuity and love message to the origins of the technology making the tool to bring out the best fruits of this territory. The company in fact still cultivates today the two historic vines of the area, Lambrusco Grasparossa and Pignoletto, plus Trebbiano used for vinegar production. With the collaboration of the oenoligst Valerio Macchioni the 35 hectares, of which 20 are vineyards, produces 80 thousand bottles of wine DOC respectful of the ancient peasant know yet contemporary taste. But above all, the Company produces 500 thousand of precious balsamic vinegar bottles retracing a tradition starting in 1.000 year and in the Renaissance, and which had its maximum splendor moment thanks to the Este family. In Manicardi acetaia you can enjoy the Traditional Balsamic Vinegar of Modena DOP Extravecchio (aged 25 years) and Refined (12 years) divided into different lines depending on the aging period, the type of wood used – chestnut barrels, cherry, mulberry, juniper, oak – and the degree of concentration of the must. All elements that determine the various nuances of taste, as many as the food combinations that can be invented with the “black gold”.
