Operative since June, the 20th, the first Italian Chocolate Academy Center is directed by Maître Davide Comaschi.
After the Salon du Chocolat, the Italian edition of the prestigious Parisian kermesse, Milan strengthens its bond with the world of high-class chocolate. Since the 20th of June, is opening the first Italian Chocolate Academy Center by the Swiss company and world leader in chocolate Barry Callebaut, which entrusted it to the award-winning maître chocolatier Davide Comaschi. To complement the winner of the World Chocolate Masters 2013, there also is a close team of chef teachers appreciated both in Italy and abroad. Alberto Simionato, who has been a chef in Spain since 2010 with Cacao Barry by Barry Callebaut; and Paolo Cappellini, chef specialized in ice cream production. For its 22nd Chocolate Academy Center, Barry Callebaut points to creativity, innovation and expertise. In fact, these are the main objectives of the Academy’s offering, which provides courses for chocolate
enthusiasts who want to get to know this extraordinary product and deepen the history and culture of cocoa. The Academy offers to professionals the opportunity to improve their skills in chocolate and learn new techniques and recipes. The Chocolate Academy Center is located in Via Morimondo 23 in the Navigli area and has ample and equipped multifunctional spaces dedicated to training: Space Sensory, Space Intensity and Sweet Space, equipped with all the cutting edge machines in the field of chocolate and pastry. The Academy is therefore the meeting place for the cocoa culture, the most advanced technology in chocolate production and, of course, the Made in Italy design. The trainees will be able to choose from a variety of seminars, theoretical courses and practical workshops, living the whole chain of chocolate production, from wood to product sales and management techniques. The workshop will host not only the Academy for the company’s future international projects, but also the global chocolate ice cream center: the first ChocoGelato Lab devoted to this Italian craftsmanship excellence.
