Inside the estate – 80 hectares organically cultivated with a working farm, an artisan cheesemaking dairy, two vineyards, 5 hectares of lush garden, a space dedicated to beekeeping and a rolling green pasture land alongside the River Merse – each room evokes an individual atmosphere that tells a story, with custom-sought antique pieces, bespoke beds and frescoes executed by hand. Designed for
serenity and privacy, Borgo’s garden suites open onto a Mediterranean courtyard dotted with sun lounges and fragrant citrus trees or leafy terraces with outdoor fireplaces, lounge areas and entirely private gardens. But the philosophy of nourishment through the nature that permeates all Borgo Santo Pietro is certainly not something abstract and it is well expressed with the
concept of “Farm to plate”. The starred restaurants Meo Modo on site and La Bottega del Buon Caffè in Florence are the culinary kingdoms of chef Andrea Mattei and chef Antonello Sardi, who design their menus with the collaboration of farmers and gardener to bring in table the fruits of organic cultivation. You can also find the freshly harvested ingredients, such as sheep’s milk, cheeses,
honey, and Sangiovese, Cabernet Sauvignon, Merlot, Petit Verdot, Pinot Noir, Trebbiano Toscano, Chardonnay and Viognier vines in the original Trattoria Sull’Albero and in the Brasserie & Bar used in the Borgo Cooking School, further experience offered by the estate member of Relais & Châteaux. Just as engaging are the artisan cheesmaking at the dairy, the wine tastings, the
lessons in the flower house or the art lessons on the lake, which include the participation of internationally renowned artists.
