Indispensable pleasure for the palate both as completion of a first course, either in more sophisticated combinations or even tasted alone together with a good glass of wine. Parmigiano-Reggiano is not a simple cheese but a real experience among its different types. Because its taste, its consistency and persistence change according to the origin: plain, hill or mountain. But also according to the breed of dairy cows – frisian, white, brown or red – and obviously to aging, so that the cheese becomes for meal, ripe or aged. In short, we would be lost if it were not for our rescue comes Gusto Parmigiano, a risto-shop entirely dedicated to Parmigiano-Reggiano that has just opened in Milan (Via della Moscova 24) and proposes a sensory journey under the guidance of Federico Fernus, a great connoisseur, “sommelier of Parmigiano”, ready to make us appreciate nuances and peculiarities and to

teach us how to best appreciate the precious cheese. And then there is the catering area, entrusted to Federico D’Amato, son of Gianni D’Amato – chef and patron of the starred Rigoletto unfortunately destroyed by the earthquake of 2012 – and author of the Gusto Parmigiano project together with Fernus and Riccardo Toschi. In the menu of Federico, where Parmigiano Reggiano is the main ingredient, there are some very interesting lunch proposals such as the “Lasagne a km 220” (the distance between Milan and Bologna), the “Cheese Parmigiano-Reggiano Burger – vegetarian burger with ketchup of Campanina apple, chard and Parmigiano-Reggiano for meal – and the “Verticale di Parmigiano-Reggiano”, that is a guided tasting of three seasonings
parmigianoaccompanied by a selection of jams. The evening is dedicated instead to the ritual of the aperitif, which includes among other things the “Tagliere Gusto Parmigiano in two acts”, “cold” with the best of the cold cuts in Emilia and – real news – a “hot” version, an encore three of the legendary Emiliani main course, always accompanied by a glass of the best wines selected in the area or by craft beers from the production area. Throughout the day you can then buy a unique selection of Parmigiano Reggiano and other excellent products – salami, balsamic vinegar and wine – of the plains territory located between the provinces of Parma, Reggio Emilia, Modena, Mantova (right of the river Po) and Bologna (left Reno), the area of origin of what is called “the King of Cheeses”.(info: www.gustoparmigiano.it)
