On January, the 28th, the new chef contributor of Bioesserì Fabrizio Mantovani will introduce an evening dedicated to the flavors of his land.
It will be a declaration of love for his Romagna the special menu that Fabrizio Mantovani will present on January, the 28th, at Bioesserì Brera, the restaurant in the heart of Milan at the center of whose philosophy it have always been environmental sustainability, respect and research of the best raw material strictly biological. Mantovani will accompany on a journey in the emotions that flow through the memories told in the dishes. A return to the origins by “La mia Romagna mia” – this is the claim of the evening – with Mantovani committed to combining ingredients to give new shapes to the flavor. The guests of Bioesserì will be welcomed with a welcome made up of two typical products, such as mini piada with breaded thistle, beef tongue and shallot mayonnaise and focaccia with pink salami, organic mortadella Scapin Slow Food presidium. The menu will continue with potato fondant with creamed cod, herring and plenty of apples to get to the inevitable cappelletti with 36-month-old Parmesan in artichoke broth, served with artichoke and smoked ricotta cheese. As main dish, wil be served a boneless guinea-fowl with Jerusalem artichoke, black cabbage, black truffle and coffee. It will close in sweetness with the zuppa inglese and the shortcrust pastry.
