Marco Acquaroli, thirty years old from Lombardy currently sous chef of Saverio Sbaragli in the prestigious restaurant The Lake of Four Seasons in Geneva (one michelin star) has won the Italian selection of Bocuse d’Or, that took place in the impressive Teatro Sociale in Alba, with two dishes of high technical content: the seaweed sturgeon fillet with leek stuffed with caviar potato, red onion with cauliflower and onion consommé; deer with roasted juniper, beetroot stuffed with braised leg, pumpkin flan, mille-feuille of jerusalem artichokes and truffle, barolo vinegar sauce (the imposed themes were the sturgeon and the deer). Other prizes: Gabriele Furi best commis award, Giuseppe Raciti European recipe award, Debora Fantini best fish recipe, Francesco Gotti best meat recipe. The other participants in the competition: Lorenzo Alessio, Riccardo Basetti, Andrea Alfieri, Daniele Lippi, Giovanni Lorusso, Michelangelo Mammoliti, Leonardo Marongiu, Stefano Paganini. The winner will face other twenty winners of the various
national selections of Europe in Budapest on 10 and 11 May 2016 and only the best ones will be admitted to the world final in Lyon at the end of January 2017. Thirty exceptional judges will judge the recipes: Matteo Baronetto, Enrico Bartolini, Andrea Berton, Francesco Bracali, Riccardo Camanini, Filippo Chiappini, Giovanni Ciresa, Enrico Derflingher, Nino Di Costanzo, Gennaro Esposito, Anthony Genovese, Oliver Glowig, Antonio Guida, Giuseppe Mancino, Valentino Marcattilii, Riccardo Monco, Fabio Pisani, Martin Obermarzoner, Davide Oldani, Piergiorgio Parini, Valeria Piccini, Marco Sacco, Claudio Sadler, Emanuele Scarello, Maurizio Serva, Massimo Spigaroli, Mauro Uliassi, Luisa Valazza, Gianfranco Vissani, Gian Piero Vivalda. And also: the President of the competition is Giancarlo Perbellini, Jury President Enrico Crippa, backstage jury Fabio Tacchella, jury attendants Paolo Lopriore and Luciano Tona. Guest of Honor: Orjan Johannessen last winner of Bocuse d’Or. Now the appointment for Marco Acquaroli is in Budapest and it will be a very difficult challenge.
