When travelling in Air Canada’s International Business Class cabin, expect a selection of inspired dishes, including innovative, sophisticated cuisine by celebrated Canadian Chef David Hawksworth. Air Canada’s culinary partner, Chef Hawksworth will create a selection of seasonal dining options including appetizers, main courses and desserts, complementing our current route-inspired dining on international flights. On flights departing Canada, following an after-take off cocktail service, start your meal with a Hawksworth signature appetizer, such as yellowfin tuna tataki with scallion vinaigrette, passion fruit and puffed rice. Next, choose from a selection of entrées like grilled Alberta AAA beef tenderloin with truffle and porcini sauce, potato au gratin, baby carrots and fine green beans or Chef Hawksworth’s tamari roasted sablefish with bok choy, carrots, brown rice and chili miso vinaigrette with crispy shallots.
