Dynamic and talented, Paolo Sari – who trained in Italy, at the University of Cambridge and in Los Angeles – prefers organic and local products by offering dishes that respect the seasons, and a spring, a summer and an autumn menù. Leding all the kitchens of the Monte-Carlo Beach restaurants (Elsa, Deck, the Vigie, the Sea Lounge, in addition to the about 300 cabanas and the sundeck Club), the Venetian chef uses only 100% organic raw materials, from pepper to champagne, including the rosé. The Elsa Restaurant menus include twenty dishes in which delicacies and health come together in a harmonious way.
