Copenhagen the queen of the haute cuisine. A title that the Danish capital is awarded thanks to the 20 Michelin stars that reward the restaurants in the city and the surrounding area in the Nordic Guide 2016, the edition of the Michelin Guide dedicated to the Nordic countries. Three stars at Geranium, the only three stars restaurant completely organic in the world and also the first restaurant in the city to receive the recognition, thanks to the skill of the chef Rasmus Kofoed, the winner of the Bocuse d’Or in 2011 and whichstands out the prize list of accolades record with 3 podiums in the prestigious competition. The other three stars of Nordic Guide is the Maaemo restaurant in Oslo, Norway. Back to Denmark, the restaurants Noma, headed by chef René Redzepi, and AOC, whose kitchen is managed by chef Søren Selin, maintain the 2 Michelin stars. A success for Kong Hans (chef
Mark Lundgaard) too, who after having been the first Copenhagen-starred restaurant, has finally recovered the lost star in 2014. Located on the eighth floor of Fælledparken, the building of the city stadium, Geranium offers a menu bio 100% which in turn includes dishes like cold soup with crispy vegetables, baskets of fragrant bread with vegetable creams, dehydrated chicken and turnip sticks. The kitchen of Rasmus Kofoed combines technique and imagination based on herbal ingredients from organic and biodynamic cultivation. As for the other restaurants with 1 star in the NordicGuides, outside Copenhagen we can find Grønbech& Churchill, Relæ, DenRøde Cottage, Kokkeriet, Era Ora, Formel B, KiinKiin, SøllerødKro, Kadeau, Clou, Studio and Marchal.
