It will be soon one of the best destinations for the Milanese evenings, thanks to the haute cuisine dishes signed by the young chef Matteo Minutiello, a fine wine cellar and a refined design environment. LaGare Bistrot, located on the fourth floor of LaGare MGallery Hotel by Sofitel – a stone’s throw from Central Station and with spectacular views of the new Skyline Milanese – opens the autumn season in his new Gourmet role and offers a wide selection of dishes created from very high quality raw and zero km materials in perfect harmony with the high standards of environmental sustainability pursued by La Gare Hotel, LEED Gold certificate. Miniutello cuisine is refined and inventive. He brings to the table a revisited Milano gastronomic tradition relying on the essentials and seasonality. “My kitchen is nourished by the Milanese tradition thanks to my grandfather, Milan doc, able to cook extraordinary dishes using simple and natural ingredients,” says the chef. “It is a tradition to which I owe so much and that I recall in any dish even where the research does not omit prolonged cooking at a low temperature or the horizontal plates, capable of engaging the senses through the flavor, texture and especially the smells.” So, the best known traditional dish, the “Cotoletta alla milanese” is served by Matteo Minutiello faithfully following the original recipe: high and with bone, cooked only in butter. And in his capable hands it becomes “La Buona Costoletta alla Milanese”, also assuming a beneficial connotation. For every Buona Costoletta served at LaGare Bistrot, 1 euro is donated to the foundation Food & Life, non-profit association of F&De Group supporting Pane Quotidiano, a lay organization that for more than a century assures every day (and free) food to poorest.
