In 2017, the Ernst Knam Pastry has turned off 25 candles and is now preparing to celebrate an exciting and full of energize Christmas.
The Christmas symbol character 2017 comes from far, but keeps a sweet heart. The Koala Zoe, along with his friend Kurt, made entirely of chocolate, have been chosen to represent the Milanese pastry of Via Anfossi 10 during these feasts. A handmade creation in the smallest detail that takes us to the heart of Australia without forgetting the Christmas atmosphere. Thinking of Germany, the native country of Chef Ernst Knam, there is the Hansel and Gretel Chocolate House, finely decorated with a thousand delicacies inspired by the famous Brothers Grimm fairy set in the German countryside. tree and the Crispearls Tree has now become a reference point for the Knam offer for Christmas holidays, in its two small and big versions. Following the line of art, which has crossed not only this past 25 years of pastry but also the entire career of the famous Maître Pâtissier, the Modern Tree is proposed in its classic version and in the Pollock version, which takes its name from famous American artist Jackson Pollock, the “father” of dripping technique, used by Chef Knam for the brand new Pine and Christmas Balls, nowadays not only on the tree but also on the table. Santa Claus and the tender Penguin the offering of handmade chocolate characters, complete with every detail to surprise. Great space also has the yeast, with classic Panettone, liqueured pears and chocolate, Pandoro, Venetian and Christstollen, with teutonic perfumes. The latter is made every Christmas following the tradition recipe, which involves baking in the oven, immersing in melted butter and a last step in the icing of sugar. always renewed with new influences and flavors. This year is the turn of Sorrento semicandled lemon and green cardamom. Dulcis in fundo, the creations of completely unpublished pastry and limited edition for Christmas time: the Cake Tree, combining the unmistakable taste of mousse with the three frosted chocolate to a special chocolate creation and the Croquembouche, one of the most famous and complex French sweets, a unique and inimitable gift for the holiday season.
