On November, the22th, at the historic Pastry Shop Ernst Knam it will celebrate the Tris Day in honor of his iconic cake.
The history of the Tris, the mousse with three chocolates that represents the very essence of Ernst Knam will be celebrated for a whole day in the Milanese pastry shop in Via Anfossi 10 with a Tris Day during which we will find a wide selection of products dedicated to creation symbol of the famous cook and Maître pâtissier. Because the Tris has a story in itself and it’s a great story. The first photographic trace of the composition is dated 1987, when the young Knam worked and trained at the Terrace restaurant at the Dorchester in London, at that time led by Anton Mosimann: three segments of milk and white two-color mousse, immersed in a sea of dark chocolate. A simple and brilliant basic idea that has evolved over more than thirty years of career especially thanks to the teachings of Gualtiero Marchesi, in whose kitchens Chef Knam has perfected his concept and his philosophy of pastry. “To remove, not to add” has always been the pivotal concept of the great Master and Knam has made his teaching his own, focusing on raw materials, clean lines and immediacy of taste and flavors. From Marchesi, of which December, the 26th, is the first year since the disappearance, the mousse recipe for the three chocolates is refined, proposed to customers in the form of terrine and it is ready to begin its journey, as is Knam. In 1992, in Via Anfossi 10, where the Pasticceria Ernst Knam is still located, opens the Antica Arte del Dolce, of which the mousse with three chocolates will immediately be the distinctive trace
and the most requested and sold product of the shop. Over the years, the creation changes shape and appearance, but the substance remains the same: a base of marquise (sponge cake without flour), a dark chocolate mousse, a milk chocolate mousse and a white chocolate mousse. On the surface, some gianduia curls. The composition, lightness and taste make it unforgettable and immediately conquers the hearts of customers and professionals: the historical recipe has been requested and published several times in the general and sector press, until arriving to large publishing houses. But the Tris was also the protagonist on television, by “Il Re del Cioccolato” and “Bake Off Italy”, where it was one of the tests of the first season of the program. As will naturally find space in the new book of the Chef that will be published next January. In short, a creation that never goes out of fashion and that still today is loved and highly sought after by those who enter the Pasticceria Ernst Knam. During the Tris Day we will find it in the form of cake, single portion and chocolate and we can also participate in the construction of the narrative of this particular day taking a picture in the store or with our purchase.
