The legendary Christiansborg’s Royal Kitchens, Copenhagen, regain their former glory and, after an extensive renovation, are now ready to offer an intense sensory experience for visitors of the Palace. Inaugurated in the presence of the Queen of Denmark Margrethe II, the kitchens are now open to the public, who will attend the preparations of a royal banquet and admire one of the largest collections of copper kitchenware in Europe. On the occasion of the Silver Jubilee of his reign, May 15th 1937 King Christian X organized a party in the Great Hall of Christiansborg Palace, offering to his numerous distinguished guests an exquisite dining experience and a fabulous menu consisting of contemporary cuisine and French refinement: soupe ambassadeur, filet of sole a la Nantua, Bouquetiere fillet, chicken Parisian, real ice cream and desserts. “Today – says Mirja Thaulow, responsible for the cultural communications of the Christiansborg Palace – we want to recreate the atmosphere of the royal kitchens of the 30 Years: the chef shouting his orders, the cooks who keep in balance 20 kg of copper pots , pastry chefs posing elegant candied fruit crowns on cakes, the fillet of fish and ice blocks that land with a thud on the boards”. In Royal Kitchens there are the utensils and furnishings from the time of Christian X and visitors can follow the preparations for the gala dinner to celebrate the 25-year reign of the ruler, the biggest royal banquet ever held in 90 years for 275 guests. Historians have dug deep to Christian X era court archives. Guests lists, allocation of places at the table and menu allow you to trace the history of banquets and dinners of the sovereign. The menu is a veritable feast of gourmet French cuisine, with chestnut soup, roast grouse and turtle soup, the favorite of the king. The archives also reveal a series of mysterious dishes of French origin that lead historians to investigate the famous book by the guru’s kitchen gourmet French Auguste Escoffier from the early ‘900.
