First Michelin star for the Fær Øer Islands thanks to Koks restaurant and the twenty six year old chef Poul Andrias Ziska. Denmark now shines with 29 stars in total.
“At Koks we want to create an amazing dining experience based on our origins and our Faroese traditions, using only local products. This is our strength, our products often speak for us”. Word of chef Poul Andrias Ziska, who explored the origins and traditions and adopting smoking techniques, fermentation and salting, allowed the Koks to get into the list of the best dining experiences in the world. First Michelin star for the Fær Øer Islands thus and total 29 stars for 25 restaurants of Denmark in the Michelin Guide Nordic countries 2017. The new entries in this edition are the restaurant “younger brother of Noma”, the 108 Copenhagen and Aarhus Domestic restaurant. In the countryside of West Sealand, within the historic castle of Dragsholm, the Slotskøkkenet won his first Michelin Star with the restaurant Ti Trin Ned Fredericia. The star awarded to Henne Kirkeby Kro on the west coast of Jutland shows the exponential growth culinary that is experiencing Denmark also far from the capital. The dining experiences outside of Copenhagen are becoming ever more numerous and among these there are the Hotel Frederiksminde, the Kadeau restaurant in Bornholm and Søllerød Kro, in addition to Koks, which strictly seasonal menu combines tradition and modernity in his dishes delicate with a simple and fresh cuisine. In Copenhagen, the Geranium restaurant has seen reconfirmed its 3 stars and, counting the recognition to 108, the Danish capital has now 18 Michelin stars awarded to 15 restaurants.
