Three red forks in the Michelin Guide, two forks on the Gambero Rosso guide and the radiant crown on notebook Gatti-Massobrio. These are just some prizes awarded by Derby Grill restaurant, beautifully managed by the young executive chef of the Hotel de la Ville in Monza, where the restaurant is located. Moreover chef Fabio Silva is one who studies and designs its menu with great sensitivity and a particular attention to the culture of products to propose a kitchen of character and respectful of the territory, but not only. So in a unique location, right opposite the magnificent Villa Reale in Monza, there is the cuisine of Fabio Silva, a mix between creativity and tradition while respecting the seasons and the very high quality of the ingredients. Warm, elegant, intimate but also cool, the Derby Grill is set with its beautiful oak boiseries and fine pieces of antiques, offering an interesting and varied proposals for lunch. Alongside the now claimed Daily menu, which changes daily, depending on the creativity of the kitchen staff, the only lunch menus are three inspired “Unique Dishes”. Born to meet the needs of customers who want something fast and light, the chef – who is a member of Euro Toques International and often participates in projects implemented by President Enrico Derflingher and honorary president Gualtiero Marchesi – in agreement with the Restaurant Manager Roberto Brioschi has decided to present in a single course the culinary creations of its cuisine. The same quality is found in the seasonal menu, with a selection of dishes that includes some of the cornerstones of the Lombard tradition. This is how two tasting menus, that celebrate some of the culinary excellence of the territory, has been created. The choice may fall on “ossobuco con risotto allo zafferano” (veal ossobuco with saffron risotto), accompanied by a starter and a sweet which varies seasonally, or “risotto con la luganega magra” (lean sausage), Monza’s speciality, followed by the real “cotoletta alla milanese” (crumb breaded veal cutlet) and a typical cake with cocoa, pine nuts and raisins. These dishes are added fresh and simple recipes, born from the creativity of the chef Fabio Silva, inspired by the latest culinary trends and the most innovative cooking techniques. The à la carte menu changes seasonally and is also available for business lunches.
